This lemon chicken recipe requires little preparation and uses only one pot and one skillet. It tastes great with lots of lemon, spices, and my favorite green olives.     Ingredients:

    • 1 lemon
    • 2 pieces of chicken breast with skin and bones (about 1 1/4 pounds)
    • 1/4 teaspoon kosher salt
    • 2 spokes of black pepper
    • 1/3 cup of plain yogurt
    • 1/2 small red onion, cut into thin slices
    • 1 tablespoon of olive oil
    • 1/2 cup chicken stock or white wine
    • 1 cup small pasta such as cavatelli, orzo, or ditalini
    • 1/4 cup chopped parsley leaves
    • 1/4 cup chopped coriander leaves
    • 1/2 cup peeled green olives, cut in half or quarters

    Easy and Delicious Lemon Chicken Recipe for Two

    How to make:

    1. Cut half of a lemon into rounds and use the other half to squeeze over the chicken.
    2. Place the chicken on a flat plate. Sprinkle salt on both sides of the chicken and a few pinches of black pepper. Squeeze the juice from half a lemon over the chicken and coat it with the yogurt. Flip the chicken several times in the yogurt, and let it marinate at room temperature for 30 minutes or wrap it in plastic and refrigerate for up to 12 hours.
    3. Place an oven rack on top of the oven and preheat the oven to 375°F or about 190°C.
    4. In the bottom of a heatproof skillet or small roasting pan, sprinkle the sliced shallots and lemon wedges. Drizzle with olive oil and sprinkle a little salt and black pepper.
    5. Place the chicken on top with the skin facing up and roast for 35 to 40 minutes, or until the skin is browned and an instant thermometer inserted into the inside of the chicken reads 165°F or about 74°C. (The exact cooking time depends on the size of the chicken breast).
    6. In a large saucepan, bring 5 to 6 cups of the salt water to a boil. Add pasta and cook for 10 to 12 minutes (or according to package directions) until tender. Drain in a colander.
    7. Remove the cooked chicken from the pan and stir in the stock or wine. Mix pasta, parsley, coriander and olives. Serve on two plates and place the chicken on top.
